Ripe Sweet Mangoes – 2 (Chop them into cubes)
Sugar – ½ cup
Finely grated Lemon Zest – 1 tbsp
Lemon Juice – 1 tbsp
Water – 2 cups
Take the Mango cubes, Sugar, Lemon Zest, Lemon Juice and a little water in a blender. Blend them very smooth for about 2 minutes. Add the remaining water and blend them again. If the Mango used is of a fibrous variety, strain the blended puree. The puree should be thin (Not too thin) which helps in making the crystals.
Take the puree in a large glass or metal container. Large container helps in giving a large surface area at the top which in turn helps in speeding up the freezing process. Cover the containers with aluminium foil.
Keep the container with the puree in a freezer. Stir it every 30 minutes. Do this at least 3 to 4 times.
Now, allow it to freeze.
When you want to serve, scrape it with a fork, collect the shaved crystals in chilled glasses or bowl and serve immediately.Enjoy the Mango Lemon Granita.
