Bun Dosa

We have all tasted various varieties of Dosa – the popular breakfast dish of South India. We will see how to make Bun Dosa. It attains the name Bun Dosa due to the texture which would be like a bread bun and the size is also similar to a Bun Bread. When you look at the regular Dosa, it is made of Rice and a lentil- generally Urad Dal. But, this Bun Dosa does not contain any lentil. All that is added is a tempering and grated Coconut to enhance the taste. The end result would be a spongy soft Bun like Dosa which is a popular dish in the Kerala and Tamilnadu region. It is very simple to make this Bun Dosa. It may take a little time for fermenting. Do try and let us know how you enjoyed it.

Ingredients – For Batter :

Raw Rice – 2 cups

Fenugreek Seeds – 1 tsp

Beaten Rice (Poha / Aval) – 1 cup

Grated Coconut – 1 cup

Salt – to suit taste

For Tempering:

Oil – 2 tbsp

Mustard Seeds – 1 tsp

Urad Dal – 1 tsp

Green Chillies – 3 (finely chopped)

Curry Leaves – from 2 sprig.

Method:

Take the Rice and Fenugreek Seeds together in a bowl. Rinse well. Soak in water for 4 to 6 hours.

Wash Poha and soak for 30 minutes.

Grind the soaked Rice and Fenugreek Seeds together in a mixer or blender into a smooth batter with required water. Add the soaked Poha and the grated Coconut. Blend them well to a smooth batter with required water. Mix very well.

Cover and allow it to rest in a warm area for 8 hours for the fermentation to happen. It should ferment well within 8 hours in general.

Start preparing the tempering. Heat 2 tbsp of Oil in a pan. Splutter the Mustard Seeds in it. Add the Urad Dal. Add Green Chillies and Curry leaves one after another. Sauté for few seconds and pour the tempering into the fermented batter. Add a spoon of Salt and mix well.

If the batter has not fermented, add a tsp of Eno Salt and mix well.

Heat an Appam pan or Tadka Pan. Grease it with few drops of Oil. Pour a ladle full of batter. (Do not spread it). Pour a little Oil all around.

Cover and simmer for 3 minutes in medium flame. Take care not burn it.

Once the base turns golden brown, flip it. Cook the other side also. Cook both sides making sure this Bun Dosa is done well on both the sides.

The flavorful Bun Dosa is ready. Enjoy with a chutney of your choice.
