Instant Fresh Red Chilli Pickle / Lal Mirchi Ka Achar (pickle recipe)

Red Chilli Pickle is a very simple and easy to make pickle. Pickles are great condiments in Indian cuisine; you can find varieties of pickles from all the regions in India – each with its own specialty in making the pickle.  Pickles are known as Achar, Athanu, Urugai, Pachad, Uppinakayi etc depending on the region where it originates.  Whatever the name is, it goes very well rice, roti, tepla, kichadi pulav etc. One can say that the meal is not complete without a pickle on the plate. Pickles are prepared with seasonal vegetables of the region like raw Mango, tender Mango, Narthankai (Citroen), Gooseberry etc. Even fresh Red Chillies are good for making pickle. Pickles are made with such skill and art that they can be stored for months together and enjoyed.  We will see here how to make a Red Chilli Pickle which goes very well with Tepla , Bhakri etc.

Ingredients :

Fresh medium spicy Red Chillies – 250 Gms (washed and dried)

Fenugreek Seeds – 2 tsp

Lemon Juice – 2 tbsp

 Salt – adjust to suit taste

Coriander Seed – 1 tbsp

Yellow Rai ki Kuria (Split Mustard Seeds) – 2 tbsp

Cumin Seeds – 1 tsp

Oil – 2 tbsp

Dry Mango Powder (Amchur Powder) – 1 tsp

Turmeric Powder – ¼ tsp

Asafoetida – ¼ tsp

Method:

Remove the stem of the pre washed and dried fresh Red Chillies. Cut them to any shape and size of your choice. Add salt, mix and keep aside.

Crush the Fenugreek seeds into a coarse powder. Add Lemon juice, mix and keep aside.

Heat a pan and dry roast the Coriander and Cumin Seeds in low flame for a minute. Allow them to cool. Crush them together with Mustard Seeds to a semi fine powder.

Heat the Oil in the pan. Lower the flame when it becomes medium hot. Add the semi fine powder prepared above and stir well. Add the lemon juice soaked Fenugreek Powder. Switch off the flame. Stir the content in the pan for few seconds. Add Dry Mango Powder, Turmeric Powder and Asafoetida. Stir well.  Add the chopped fresh Red Chillies.

Switch on the flame again. Stir the pickle in low flame for 2 to 3 minutes. The pickle will turn a little thick. Adjust Salt, if required.

Transfer to a bowl.

The tasty Fresh Red Chilli Pickle is ready. Enjoy your Roti, Rice and Tepla etc with this tasty pickle. We can store it in the refrigerator for a couple of weeks.

Note:

If you want it to be less spicy, you can remove the seeds from the Chillies and discard the seeds.

If you want the pickle to be more spicy, you can add Red Chilli Powder when you add Dry Mango Powder, Turmeric Powder etc.
