When you put Zucchini and Cucumber side by side, you may not be able to see the difference. The difference shows only when you touch them- cucumbers have a waxy bumpy exterior whereas Zucchini are a dry texture. Zucchini are generally considered as vegetables whereas Cucumbers are considered as fruits. Both the vegetables can be eaten raw. Cucumbers will be sweet whereas Zucchini will be sweet with a little bitterness. Zucchini contains zero fat, and is high in water and fiber. It also contains significant amounts of vitamins B6, riboflavin, folate, C, and K, and minerals, like potassium and manganese. Let us see how to make a tasty spicy dish with Zucchini.
Olive Oil – 1 tbsp
Finely chopped Garlic – 2 tsp
Onion – 1 (sliced)
Zucchini (medium sized) – 1 (sliced)
Bell Pepper – 1 (cored and sliced)
Large Tomato – 1 (Deseeded and sliced)
Red Chilli Flakes – ½ tsp
Mixed Herb – ½ tsp
Parsley (dried or fresh) – 2 tbsp
Black Pepper Powder – ¼ tsp
Salt – to suit one’s taste
Heat the Oil in a pan. Roast chopped Garlic for 30 seconds.
Add the sliced Onion and cook for 40 to 50 seconds. Add the sliced Zucchini, Green Pepper and Tomato. Mix and add Salt, Red Chilli Flakes and the mixed Herb. Stir well and simmer for 2 minute covered with a lid.
Add Parsley and Black Pepper Powder. Mix and stir for a minute.
The healthy and flavorful Zucchini Pepper fry is ready.
