This Vegetable Stuffed Idli is a delicious snack. It is a very healthy dish since it contains lots of vegetables. You can serve this as a breakfast dish or serve it in dinner also.
Oil – to grease the Idli molds
For Vegetable stuffing –
Oil – 2 tsp
Mustard Seed – ½ tsp
Urad Dal – ½ tsp
Grated Ginger – 1 tsp
Finely Chopped Curry Leaves – from 1 or 2 twigs
Finely Chopped Green Chilli – 1
Chopped Mixed Vegetables – ½ cup (Carrot, Beans and Green Peas)
Potato medium sized – 1 (Boiled and Mashed)
Idli Batter – 1 cup
Heat the Oil in a pan. Add Mustard Seed and Urad Dal in it and allow them to splutter. Add the grated Ginger, Curry Leaves and Green Chilli. Stir fry for 30 seconds.
Add the mixed Vegetables. Add Salt. Mix well and sauté for 3 to 4 minutes in medium flame.
Add the Mashed Potatoes.
Mix them well.
Grease the Idli molds with few drops of Oil. Pour 1 tbsp each of Idli Batter into each mold.
Place 1 tbsp each of the stuffing on top of the batter.
Top it with another tbsp each of Idli Batter.
Steam the Idlis for 12 minutes.
Insert a fork into the Idli and take out. If the fork comes out clean, the Idli is done.
Remove the Idlis from the molds with a spoon.
Serve with Sambar or Chutney.
