Pasta can be used to make many different varieties of dishes. One such dish made of pasta and loved by children is the Thai Green Curry Pasta. The ingredients also contain variety of vegetables which makes it a healthy choice for lunch or dinner.
Pasta – 150 Gms
Bell Pepper (Large) – 1 (cut in juliennes)
Carrot (medium) – 1 (cut in juliennes)
Broccoli – 1 (separated inti florets)
Canola Oil or Olive Oil – 1 tbsp
Grated or finely chopped Ginger – 1 tsp
Thai Green Curry Paste – 1 tbsp
Thick Coconut Milk – ¾ to 1 cup
Basil Leaves – 3 (finely chopped)
Salt – to taste
Blanch the Broccoli for a couple of minutes and keep aside. Boil the Pasta as per instructions on the packet.
Heat the Oil in a pan. Add the grated Ginger and stir cook for a few seconds. Add the Thai Green Curry Paste stir for a minute in low ot medium flame.
Add the Carrot and the Bell Pepper. Sauté them for a minute in medium flame. Do not overcook the vegetables.
Add the blanched Broccoli. Stir cook for one more minute.
Add the Coconut milk, mix well. Add Salt.
Cook on medium flame for 1 to 1 ½ minutes.
Add the chopped fresh Basil and pasta. Mix well.
Switch off the flame in a minute and transfer to the serving bowl.
