We will see a recipe using Sweet Potato as the main ingredient. Sweet Potato is not related to the normal white Potato. Sweet Potato is a root vegetable with a thin brown skin and orange colored flesh inside. They can be eaten raw after removing the skin. And they are used in preparing many tasty dishes. These starchy sweet tasting vegetable is a rich source of fiber. It contains lot many vitamins and minerals including iron, calcium, selenium etc. It is a very high antioxidant. I had already posted two dishes which have Sweet Potatoes as the main ingredient. And here we will see how to make Sweet Potato Roast. It will go well with steamed Rice and Puliserry (which I have recently posted).
Sweet Potato – 300 Gms (1 large piece)
Red Chilli Powder – 1 tsp
Coriander Seed Powder – 1 tsp
Salt – to suit taste
Oil – 1 tbsp
Coriander Leaves – 2 tbsp
Water – 2 to 3 tbsp
Oil – 2 tbsp
Wash and peel the Sweet Potato. Cut them into medium thin rounds slices. Immerse the pieces in water and keep them immersed till you are ready to start cooking. This will prevent the discoloration of the Sweet Potato.
Take the Sweet Potato pieces in a pressure cooker. Add Red Chilli Powder, Coriander Seed Powder, Salt, 1 tbsp of Oil and Coriander Leaves. Mix them well. Sprinkle a little water and mix again. Switch on the flame. Close with the lid and weight valve and cook for 3 to 4 minutes in low medium flame. Switch off the flame without waiting for the whistle to blow. We want the Sweet Potatoes to get cooked about 75 percent only, not fully. Release the pressure of the cooker, remove the cooked Sweet Potatoes and allow them to cool.
Heat 2 tbsp of Oil in a broad non-stick pan. Spread the Oil well. Place the Sweet Potato pieces on the pan arranged nicely so that the pieces do not overlap each other. Leave them to get roasted in low medium flame for 3 to 4 minutes. Flip each piece and roast the other side also. Sprinkle some oil , if required. Cook the pieces till both the sides turn golden.
Transfer them to a serving plate.
Serve with Rice with Puliserry. It is a great combination. You can also serve this Sweet Potato Roast with Dal Rice, Rasam Rice, Sambar Rice etc.
You can adjust the spiciness by increasing or decreasing the quantity of Red Chilli Powder to suit one’s taste.
Ensure that you cook the Sweet Potatoes 75 percent only in the pressure cooker. Ensure that they do not get over burnt in the cooker.
