The sweet corn salad/sundal is a very simple dish which will be a favorite with children
Oil – 1 tsp
Mustard Seed – ½ tsp
Red Chilli – 1
Green Chilli – 1
Asafoetida – one pinch
Curry Leaves from 1 twig
Sweet Corn Kernels – 1 cup
Carrot – ½ (grated)
Finely Chopped Capsicum – 2 tbsp
Wash and steam the Sweet Corn with little salt. Or you can cook the sweet corn in water with little salt and drain the water.
Heat Oil in a pan. Add Mustard. When it starts spluttering, add Red Chilli, Green Chilli and Curry Leaves. Add Asafoetida. Stir.
Add the grated Coconut and the Capsicum. Stir cook for 1 to 2 minutes. Add the cooked Sweet Corn and mix well. Adjust Salt.
The tasty sweet corn Sundal is ready. Add few drops of Lemon Juice if you prefer and mix.
