It is a simple and easy to make Sandwich. With Capsicum, Sweet Corn, Tomato added with Paneer, this Sandwich is also a perfect work lunch.
Bread Slices – 6
Butter – 2 tbsp
Oil – 1 tsp
Cottage Cheese (Paneer) Crumbled – 150 Gms
Onion – 1 (finely chopped)
Frozen or Fresh Sweet Corn – ½ cup
Capsicum (small) – 1 (finely chopped)
Tomato – 1 (deseeded and finely chopped)
Turmeric Powder – 1 pinch
Red Chilli Powder – ½ tsp
Black Pepper Powder – ¼ tsp
Chaat Masala – ¼ tsp
Salt to taste
Trim the bread slices and keep them aside.
Heat the Oil in pan. Add Onion and sauté till the Onion becomes translucent.
Add the Sweet Corn, Tomato, Capsicum, Chilli Powder, Black Pepper Powder, Turmeric Powder, Chat Masala and the Salt. Mix well and cook for 4 to 5 minutes in medium flame.
Add the Crumbled Paneer. Mix well. Stir cook for a couple of minutes in low flame. Do not allow it to become dry. It should be little moist.
Spread the Corn Paneer mixture on one side of one slice of bread.
Cover with another slice of bread. Apply butter on one side of this sandwich and spread smoothly on the surface. Keep it in the sandwich toaster with the buttered side facing down.
Now, apply some butter on the top surface also and toast the sandwich crisp.
You can also toast it in a nonstick pan. Heat the pan. Let it become medium hot. Place the Sandwich with the buttered side facing down on the pan. Press the Sandwich little with a spatula. Apply Butter on the top surface.
Flip carefully and toast the other side.
