Summer is generally the season for making Mango pickles which can be preserved and used till the next season. There are number of varieties of pickles which one can make. We are explaining the method for making one Spicy Mango Pickle with homemade Pickle Masala. We had already posted one method for making this Ready Pickle Masala. Try this pickle and let us know.
Home Made Pickle Masala – 1 cup
Raw Mango (Cut into cubes) – 4 Cups
Gingili Oil – 1 cup
(Use same cup for measurement of all ingredients.)
Select good variety of Raw Mango for making pickles. Rajapuri variety is a good variety for making Mango Pickles. You can select any good local variety. Wash them well. Wipe clean with a clean, dry cloth. Chop them into 1 inch cubes. Spread them on a dry clean cloth and dry under the fan for 5 to 6 hours.
Before making the pickle, heat the Oil to its smoking point. (If you drop few Mustard Seeds in it, they should crackle instantly. And then allow the Oil to cool to room temperature.
Take the Mango Pieces in a big vessel. Add homemade Pickle Masala. Mix them well. Add the preheated Oil. Mix and combine well. If you want the pickle to be more gravy (i.e. with more masala), you can add more pickle masala and mix. The pickle will become more spicy and so, it depends how much spicy you want the pickle to be.
Cover the vessel with a lid and allow the pickle to rest for a day. You will find the masala and oil well mixed and combined the next day. Taste it. If you find it tangier, add more Salt and mix well.
Store the pickle in a dry sterilized airtight glass container. Wipe the rim of the container with a clean tissue and then close with the lid.
This pickle can be stored in room temperature for the whole year. Take precautions to remove required quantity with dry clean spoons (not bare hands) and close the container immediately. Ensure that the Oil level is at least 1 cm above the pickle level.
