Jack Fruit has lot many health benefits. And the seeds do help in combating anemia, helping to improve vision and improving digestion. It helps in building muscles, improving skin glow, helping in hair growth etc. So, I do not throw away the seeds after eating the Jack Fruit. I make very tasty dishes using these seeds. I have already posted a few recipes using Jackfruit Seeds. Below is a recipe for a very easy spicy Jackfruit Seed Fry. You can serve this as a snack.
Jack Fruit Seeds – 25 Nos
Butter or Clarified Butter (Ghee) – 2 tsp
Curry Leaves – from 2 twigs
Red Chilli Powder – 1 tsp
Salt to taste
Chaat Masala – ¼ tsp
Asafoetida – 1 pinch
Dry the seeds in the shade (not directly under the sun) for a day or two. Cracks may appear on the skin of the Seeds. If the cracks do not appear, make a slit on the skin of the Jackfruit Seeds with a knife carefully.
Cook the seeds in a pressure cooker with a cup of water and ¼ tsp of Salt for 3 to 4 whistles.
When it cools down, remove the seeds and peel off the skins. Slice the seeds into thin pieces.
Heat the Butter (or Ghee) in a pan.
Add Curry Leaves and stir. Add the sliced Jack Fruit Seeds. Stir fry and allow the Ghee to coat the sliced Pieces evenly.
Sprinkle Salt, Chilli Powder, Asafoetida, Chat Masala. Roast the pieces for a couple of minutes.
Transfer to a serving bowl. Serve with a hot cup of coffee or tea.
Butter gives a better taste than Ghee.
