This Bread Upma is a very easy recipe which can be prepared in minutes. It is a very handy breakfast recipe for busy mornings.
Bread Slices – 6
Fresh Green Peas / Vatana – ½ cup
Grated Carrot – ¼ cup
Cilantro (Dhania) Leaves – 3 tbsp (finely chopped)
Salt to taste
Lemon Juice – ½ tsp
Oil – 1 ½ tbsp
Mustard (Rai) – ¾ tsp
Cumin (Jeera) Seed – 1 tsp
Cashew Nuts – 10
Curry leaves – 2 strands
Grated Ginger – 1 tsp
Onion Finely Chopped – 2
Green Chilli – 2 (finely chopped)
Cook the Green Peas in a pressure cooker for one whistle or till soft.
Tear the Bread Slices into pieces.
Pulse Grind the Bread pieces in a food processor to get a coarse powder. Keep aside
Heat Oil in a pan. Add Mustard. When Mustard crackles, add Cumin Seed and Cashew Nuts. In another 30 seconds, add Ginger, Green Chilli, Onion and Curry leaves.
Stir fry till the Onion becomes translucent. Add grated carrot and Sauté for a minute.
Add the Green Peas and Salt and cook for 3 to 4 minutes.
Add the crushed bread and mix well.
Add the crushed bread and mix well. If it is too dry, add 2 to 3 tbsp of water, mix and cook for 2 to 3 minutes more. Adjust Salt, if required. Add Cilantro and lemon juice and mix.
Remove to a serving bowl. This can be packed in a lunch box for kids and adultsalike
The Bread Crust was not removed in the above recipe. If required, remove the Crust before tearing the bread into pieces.
Other vegetables like Potato, French Beans, and Cauliflower can also be added to this recipe. Chop these vegetables and cook them in a pressure cooker before mixing in this recipe.
