There are number of Ladoo recipes. Rava Ladoo is a simple and easy to make recipe. It requires very minimal ingredients. It is a recipe for festive season like Deepavali, Gokulashtami etc.
Rava (Sooji / Semolina) – 1 cup
Sugar – ½ cup
Ghee (Clarified Butter) – 5 tbsp
Cashew Nuts (Broken into halves) – 2 tbsp
Raisins – 1 tbsp
Cardoman Powder – ¼ tsp
Hot Milk – 3 to 4 tbsp
Take the Rava in a mixer jar. Grind it to a coarse powder. Transfer to a bowl.
Take Sugar in the same mixer jar and grind it to a fine powder.
Heat 2 tbsp of Ghee in a pan and roast the cashew over a low to medium flame stirring all the while till it turns golden brown.
Add the raisins to it, stir for 20 to 30 seconds. Transfer to a plate.
Add 1 tbsp of Ghee in the pan, add Rava and roast it evenly in low to medium flame stirring all the time. It takes about 6 to 7 minutes. It becomes aromatic. Do not allow it to burn.
Add powdered Sugar. Mix well.
Add the remaining Ghee, Cardoman Powder and roasted Cashew Nuts and Raisins. Roast for another 2 to 3 minutes in low flame.
Add hot Milk, mix well and stir for a minute. Switch off the flame. Cover the pan with a lid.
Open it after 2 minutes. Mix well once again. Transfer to a plate.
When the mixture is little hotter than warm, Start making Ladoos (take 1 ½ tbsp of the mixture and make tight round balls).
Arrange the Ladoos in a plate and allow to cool.
While making Ladoos, the mixture may cool down and becomes dry.
If so, take a portion of the mixture, sprinkle some milk on it and microwave for 30 to 40 seconds. It will become easy to make Ladoos.
