Scrambled Eggs/Egg Bhurji (Mumbai Style)

Scrambled Egg (Egg Bhurji) is a popular street food in Mumbai City. The method of making this Bhurji is different from the methods adopted in other regions. Pav Bhaji Masala is added in addition to the regular masalas in this Mumbai style Egg Bhurji.

Ingredients:

Eggs – 4

Butter – 1 tbsp

Cumin Seeds – ½ tsp

Grated Ginger – 1 tsp

Onion (Large Sized) -1 (finely chopped)

Green Chillies – 2 (finely chopped)

Finely chopped Cilantro (Coriander Leaves) – 2 tbsp

Turmeric Powder – ¼ tsp

Red Chilli Powder – ¼ tsp

Pav Bhaji Masala – 1 tsp

Cumin Seed Powder – ½ tsp

Salt to taste

Method:

Break the Eggs into a mixing bowl.

Whisk it well and keep aside.

Heat one tbsp of butter in a pan. Add Cumin Seed and allow it to crackle.

Add Grated Ginger. Stir fry for 30 seconds in medium flame.

Add the chopped Onion and Salt. Stir cook till the Onion becomes translucent.

Add Tomato, Green Chillies, Coriander Leaves and the Spices. Cook in medium flame for 3 to 4 minutes.

Lower the flame. Add the whipped Eggs.

Stir them well and stir cook for 4 to 5 minutes till the Eggs are cooked properly.

Garnish with Cilantro.

Serve with bread, Parathas, Dal Rice etc.
