Ridge Gourd/Thurai is a very popular Indian Vegetable. It contains large amounts of nutritional values. It tastes good when cooked with Tomato, Bengal Gram, Pigeon Peas etc.
Ridge Gourd (Peeled and chopped) – 250 Gms
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Curry Leaves – 1 sprig
Onion – 1 (finely chopped)
Tomato Medium sized) – 2 (finely chopped)
Red Chilli Powder – ¾ tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – 1 pinch
All Spice Powder (Garam Masala) – 1 tsp
Salt to taste
Chopped Cilantro (Coriander Leaves) – 1 tbsp
Heat the Oil in a pan. Add Mustard Seed and Cumin Seed. When they start sizzling, add the chopped Onion and Salt.
Cook till the Onion becomes soft. Add Tomatoes, Chilli Powder, Coriander Powder and Turmeric Powder. Stir cook till the Tomatoes become soft.
Add the Ridge Gourd and mix well. Add ¼ cup of water and cook till the Ridge Gourd is cooked well.
Add the Cilantro and Garam Masala.
Stir well and cook for a couple of minutes.
Serve with Roti or Rice.
