Red Poha is a good probiotic food. It has the property to control blood sugar. And it has healthy carbohydrates. It is a good alternative to the other regular white Poha. And an Upma prepared with Red Poha is tastier than the one prepared with white Poha. Let us see how to make this healthy breakfast dish.
Red Poha / Red Aval / Red Rice Flakes – 1 cup
Oil – 1 tbsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Onion – 1 (finely chopped)
Grated Ginger – 1 tsp
Asafoetida – 1 pinch
Curry Leaves – from 1 twig
Grated Coconut – 3 tbsp
Salt – to suit taste
Lemon Juice – few drops (about ½ tsp)
Rinse the Poha in a colander under running water.
Allow to rest for 10 minutes.
In the meanwhile, heat the Oil in a pan. Add Mustard and allow it to splutter.
Add Urad Dal and Asafoetida. In few seconds, add chopped Onion, Green Chillies, Grated Ginger and Curry Leaves. Sauté them for a minute in medium flame.
Add the soaked Red Aval and Salt. Mix well. Sprinkle 2 spoons of water, if required. Cover with a lid. Simmer in low flame for 3 to 4 minutes.
Add Lemon juice and grated Coconut.
Mix and remove from the flame.
Transfer to a serving bowl.
Note: You can add vegetables like Green Peas, Potatoes to the tempering and cook them soft and then add the soaked Aval.
