Ragda Pattice (Mumbai Street Food)

One of the favorite street food of Mumbai is the very delicious Ragda Pattice. It is Potato cutlet served with White Peas Curry (Gravy). It is layered with chutneys and onions and tomatoes to give it an addictively complex flavor.

Ingredients:

For Ragda:

Dry White Peas (soaked over Night in water) – 1 ½ cups

Oil – 2 tbsp

Cumin Seeds – ½ tsp

Asafoetida – 1 pinch

Ginger – 1 inch piece (grated)

Finely Chopped Green Chillies – 2

Turmeric Powder – ¼ tsp

Salt – ½ tsp (adjust to suit taste)

Eno Fruit Salt – ½ tsp

Water – 2 cups

For Pattice:

Potatoes – 500 Gms (Boiled and mashed)

Poha – ½ cup (soaked)

Red Chilli Powder – ½ tsp

Salt – to suit taste

Turmeric Powder – 1 pinch

Cumin Seeds – ¼ tsp

Chaat Masala – ½ tsp

Oil – for roasting Pattice

Other Ingredients:

Green Chutney – as required

Tamarind Chutney – as required

For Topping:

Finely Chopped Onion

Finely chopped Tomato

Chilli Powder

Cumin Seed Powder

Chat Masala

Finely Chopped Cilantro

Fine Sev

Method:

Heat the Oil in a pressure cooker. Crackle Cumin Seeds in it. Add Asafoetida. Add grated Ginger and finely chopped Green Chillies.. Sauté them for a minute in low flame.

Add the soaked white Peas, Turmeric Powder, Salt, Eno Fruit Salt and water. Mix well. Cook them in the pressure cooker with the weight valve till the Peas become tender (not mushy). Switch off the flame. Let the steam release by itself. Open the lid. Mash the White Peas lightly with a Potato Masher. The Ragda is ready. Transfer to a vessel.  

Let us start the preparation for the Pattice. Take the Mashed Potatoes to a mixing bowl. Add all the ingredients under “for Pattice” column except the Oil. Combine them well. Prepare the Pattice. Shallow fry the Pattice crisp and golden brown.

In a serving plate, pour the Ragda and place the Pattice on it. Pour more Ragda on top of it. Top with Green Chutney and Tamarind Chutney. Sprinkle Chilli Powder, Chat Masala, Cumin Seed Powder, chopped Onion, chopped Tomato, finely chopped Cilantro and Sev.

Enjoy the tasty Ragda Pattice with a cup of Tea or Coffee.

Note:

Generally more Ragda is poured over the Pattice. I poured less amount of Ragda to give a good presentation.

For topping, we can add more Sev and crunchy Peanuts also.
