Litchi is a tiny sweet fragrant juicy fruit. It has high amount of Vitamin C, Potassium, Anti-Oxidants and minerals. It is a highly nutritious fruit. It originated from China, but it is cultivated in many countries with sub-tropical climates. Some of the countries where it is cultivated abundantly are China, India, Vietnam, Thailand, Bangladesh, South Africa and Nepal.
The fruits mature in the months of May and June in North India and mature in December and January in the South India.
We can make delicious popsicle, Sherbet, Ice Cream. Milk Shake etc using this delicious Litchi. What we will see here is the method to make a Litchi Lemon Popsicle at home using just three ingredients. Let us see.

Litchi Fruit – 12 to 15
Sugar – ¼ cup
Salt – a pinch
Lemon Juice – 1 tbsp
Water – ½ cup
Remove the skin and seeds from the Litchi. Take the flesh in a pan. Add Sugar and cook in low flame till the Sugar melts. It takes around 5 minutes. Allow it to cool now.
Take the cooled Litchi Sugar syrup in a blender jar. Add a pinch of Salt. Blend to a fine puree.
Add Lemon Juice and ½ cup of water. Blend it again.
Pour the juice in Popsicle molds. And insert a stick each in each mold.
If you use Kulfi Molds or small vessels, cover then with aluminium foil. Make small slits on them and insert ice cream sticks into it thru the slits.
Freeze them for 3 to 4 hours till they become solid.
Dip the mold in a bowl of water so that the popsicles can be demolded easily. Enjoy the refreshing Litchi Popsicle.
