Ingredients:
Oil – 2 tbsp
Purple Yam (Ratalu) – 300 Gms (Peeled and cut into cubes
Oil – 2 tbsp
Cumin Seeds – 1 tsp
Crushed Garlic Powder – 4 to 5
Onion – 1 (finely chopped)
Chopped Coriander Leaves – 1 tbsp
Kasoori Methi – 1 tsp
Tomato – 1 (finely chopped)
Turmeric Powder – ½ tsp
Salt
Red Chilli Powder – 1 tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – 1 pinch
Yogurt – 1/3 cups (should not be sour)
Chopped Coriander Leaves – 1 tbsp
Method:
Heat the Oil in a pan. Add the Yam pieces and Cumin Seeds. Roast the Yam till it is done. Transfer and keep aside.
Heat 2 tbsp of Oil in the same pan. Add Cumin Seeds and crushed Garlic. Saute for a minute. Add chopped Onion. Sauté till Onion become translucent. Add Coriander leaves. Crush Kasoori Methi by hand and add. Sauté for a minute. Add the chopped Tomato. Stir cook for a minute.
Add Turmeric Powder, Salt, Red Chilli Powder and Coriander Powder. Cook them dry.
Add the Yogurt and half cup of water. Add the roasted Yam Pieces.
Mix well. Simmer for 4 to 5 minutes covered with a lid. Add chopped Coriander Leaves. Mix well.
Switch off the flame.
The yummy Purple Yam Gravy is ready.
Transfer to a serving bowl. Serve with Rice, Bread, Roti , Nan etc.
