We have seen a few recipe made with Purple Cabbage – one of them being Purple Cabbage Stir Fry. We will make a small twist to it by adding Cottage Cheese and make it to have the Cheese taste also for the ones who love Cheese. Cheese (or what we call Paneer here) comes in different varieties. Basically Paneer is a fresh, unsalted white cheese. It can be made even at home very easily. And the one called Malai Paneer is the most preferred one for making dishes using Paneer. Protein is a power house of calcium and is also enriched with Conjugated Linoleic Acid which is known to promote weight loss by increasing the fat burning process in the body. And we do know about the Purple Cabbage – dietary fiber, vitamin C, Carbohydrates, Vitamin K, Calcium and Potassium etc. So, let us combine them together to make a very healthy and tasty dish which will go very well with Roti, Chapatti etc. It can go well as side dish with Sambar Rice, Curd Rice etc.
Oil – 1 tbsp
Cumin Seeds – ½ tsp
Onion – 1 (finely chopped)
Green Chilli – 1 (finely chopped)
Garlic – 4 (crushed)
Purple Cabbage – 250 Gms (Finely chopped)
Cottage Cheese (Paneer) – 1oo Gms (crumbled)
Red Chilli Flakes – ½ tsp
Salt – to suit one’s taste
Finely Chopped Cilantro (Coriander Leaves) – 2 tbsp
Heat the Oil in a pan. Add Cumin Seeds. When they sizzle, add the Onion, Green Chilli and Garlic. Cook till the Onion turns translucent. Now, add the chopped Purple Cabbage, Salt and Chilli Flakes. Mix well and simmer for 3 minutes covered with a lid in low flame stirring in between. If the vegetable is still raw, sprinkle 2 to 3 tbsp of water, mix and simmer for a few more minutes.
Add the crumbled Cottage Cheese and mix well. Simmer for two more minutes and chopped cilantro. The healthy purple Cabbage Cottage Cheese Stir Fry is ready.
Serve with bread or Indian Breads like Chapatti, Roti etc.
