Potato is a versatile vegetable which can be cooked alone or cooked with other vegetables to give a tasty recipe. The small Potato Pancake is a very tasty breakfast recipe. It can also be cut into bite sized peices and served as an hors d’oeuvre.
Grated Potato – 1 ½ cup (tightly packed)
Eggs – 2 Nos
Finely Chopped Onion – 1
Finely chopped Green Chilli – 2
Pepper Powder – 1/8 tsp
Oregano – one pinch
Salt to taste
Maida (All-purpose flour) – 2 to 3 tbsp
Peel the Potatoes and grate it. Squeeze out water from it.
Break the Eggs in a mixing bowl.
Add Onion, Green Chilli, Salt, Pepper Powder and Maida.
Whisk it with a fork or a spoon.
Add the grated and squeezed Potatoes to the Egg Mixture. Mix well.
In the meanwhile, heat a nonstick pan or a skillet. Add ½ tsp of Oil and spread it across the pan. When it becomes medium hot, drop around 2 tbsp of Potato batter and flatten it gently into a small circle. Make as many pancakes as will fit in the pan leaving enough space to flip them.
Cook in medium flame for about 4 to 5 minutes till the Pan cake becomes brown. Flip the Cakes and cook for another 3 to 4 minutes.
Serve it hot with Salsa, Sauce or Schezwan Chutney.
