Potato Egg Masala is a simple, quick and easy to make dish. It is a delicious curry with Potatoes and hard boiled Eggs. We can make this as a dry curry or as a gravy dish. It is mildly flavored curry with very few ingredients. Can be served with roti or rice.
Hard Boiled Eggs – 5
For Masala Paste:
Coriander Seed Powder – 1 tbsp
Cumin Seed Powder – ½ tsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/8 tsp
Salt – to suit taste
Water – as required
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Onions – 2 (chopped into small cubes)
Tomato – 1 (crushed)
Potato – 1 (peeled and cut into wedges)
Finely Chopped Cilantro – 2 tbsp
Take all the ingredients for masala paste in a small bowl. Add enough water to make a smei thick paste. Mix well. Keep aside.
Heat the Oil in a pan. Add Mustard Seeds. When it starts spluttering, add Cumin Seeds. When the Cumin Seeds start sizzling, add the Onion. Cook for 2 minutes.
Add the Masala Paste what we prepared earlier. Mix and cook till the water evaporates. Add the crushed Tomatoes and continue cooking. Add the Potato wedges, Mix well. Add 1 ½ to 2 cups of water.
Cover the pan and simmer for 6 to 8 minutes in medium flame till the Potatoes are done.
Make some sits on the hard boiled Eggs. Add the Eggs to the gravy. Adjust water to suit the preferred consistency. Adjust Salt also. Simmer for 3 to 4 minutes. Add the Cilantro. Mix well. Transfer to a serving bowl.
You can add Garam Masala also while cooking. I like the dish without Garam Masala.
