Amaranth Leaves are available in different region with different names. We can prepare many different dishes with these healthy green leaves. Keerai Potato Curry is one of such dishes.
Siru Keerai (Amaranth Leaves) – washed and finely chopped – 3 cups
Oil – 2 tbsp
Cumin Seeds – 1 tsp
Garlic Crushed – 8 pods
Potato medium sized – 2 (cut into pieces)
Turmeric Powder – ¼ tsp
Chopped Tomatoes – 1
Coriander Seed Powder – 1 tsp
Chilli Powder – ½ tsp
Garam Masala – ¼ tsp
Salt to taste
Heat the Oil in a pan. Add Cumin Seeds in it and allow them to splutter. Add the crushed Garlic. Stir for a minute.
Add Potatoes, Salt and Turmeric Powder. Sauté those for 4 to 5 minutes in medium flame till the Potatoes are done.
Add Tomatoes, Coriander Seed Powder, Red Chilli Powder and Salt. Cook till the raw smell goes way. Add the Siru Keerai (Amaranth Leaves). Stir cook for a couple of minutes. Adjust Salt if required.
Add a cup of water. Cover and simmer in medium flame for 4 to 5 minutes stirring in between.
Transfer to a serving bowl.
