Pasta in Creamy White Sauce uses some of the key ingredients in Italian cooking:e Pasta, Butter Milk and All Purpose Flour. It is a simple recipe to make and is a good fix for a quick lunch or dinner.
Pasta – 1 ½ cup
Oil – 1 tsp
Salt – ½ tsp
Water – 1 litre
To stir fry
Butter – ½ tsp
Chopped Carrot – ½ cup
Chopped Green, Red and Yellow Capsicum) – 1 cup
Boiled Sweet Corn – ¼ cup
Salt – to taste
Pepper Powder – ¼ pinch
Oregano – ½ pinch
For White Sauce
Butter – 2 tbsp
Garlic – 2 tsp (finely chopped)
All purpose flour (Maida) – 2 tbsp
Milk – 350 to 400 ml
Dried Oregano – ½ tsp
Red Chilli Flakes – ¼ tsp
Oregano – ¼ tsp
Black Pepper Powder – 1/8 tsp
Mixed Herbs – ½ tsp
Grated Cheese – 2 tbsp
Dry or Fresh Basil – ¼ tsp or 5 leaves (chopped)
Olives – 4 (optional)
Jalapeno – ½ tsp
Boil required water to immerse the Pasta. Add Pasta when the water starts boiling. Cook the Pasta in the boiling water for 10 to 12 minutes in medium flame till the Pasta is cooked well (but not too soft). Keep checking once in a while so that the Pasta does not become too soft.
Strain the Pasta in a large colander and rinse in running water to stop the Pasta from getting cooked further.
In the meanwhile, heat ½ tsp of butter in a pan. Add Carrot, Corn and Capsicum (all the three colors). Stir cook in a medium to high flame.
Add Pepper Powder, Salt and Pasta Seasoning. Stir cook for 2 to 3 minutes. Once the vegetables become crunchy, transfer them to a plate.
Heat 2 tbsp of Oil in the same pan in medium flame. Add the chopped Garlic and sauté for 30 seconds.
Add Maida (All Purpose Flour). Stir cook for a minute (Stir continuously).
Pour the milk little by little stirring simultaneously with a whisk. Cook for 1 to 2 minutes.
Reduce the flame and keep on stirring till the mixture starts to thicken. It takes 3 to 4 minutes.
When it attains a coating consistency, add Pepper Powder, Chilli Flakes, Oregano, Mixed Herbs, Basil and Salt. Mix well.
Add the Sautéed Vegetables and the Pasta.
Mix well and simmer for a minute in low flame.
Add Jalapeno, Olives and the Grated Cheese.
Mix and serve hot.
Three different colored peppers/capsicum are used to give a colored effect to the dish. You can only use green peppers as well.
Vegetables like Beans, Broccoli, etc can also be used.
Cheese, Jalapeno and Olives are optional.
