Paleo Carrot Rice is a Paleo friendly Rice preparation. It tastes good and is packed with vitamin C. It can be prepared in 10 minutes.
Carrots – 400 Gms
Olive Oil (or Butter) – 1 tbsp
Garlic (Crushed) – 1 tsp
Ginger Crushed – ½ tsp
Finely Chopped Leeks – 2 tbsp (white and light green portion only)
Chilli Flakes – ¼ tsp
Salt to taste
Chopped Coriander Leaves – ¼ cup
Sliced Almonds – 2 tbsp
Lemon Juice – ½ tsp
Wash and peel the Carrots. Chop them into small grains in a food processor or a vegetable cutter. Keep aside.
Heat Oil or Butter in a pan. Add crushed Ginger, Garlic and the Leak. Sauté them for a minute in medium flame.
Add Carrot, Salt and the Chilli Flakes and mix well. Cover the pan with a lid and simmer for 3 to 4 minutes in low flame.
Add the sliced Almonds, chopped Coriander Leaves and Lemon Juice.
Transfer to a serving bowl.
