Quinoa: ¾ cup
Garlic (finely chopped): 2 cloves
Green chillies (finely chopped): 2
Kidney beans or red beans (boiled and drained): 1 cup
Tomatoes (diced): 3
Fresh or frozen corn kernels: ½ cup
Chili powder: 1 tsp
Cumin powder: ½ tsp
Cheese (feta or mozzarella): ¼ th cup
Salt and pepper to taste
Heat oil in a pan. Add garlic and jalapeno and cook for 30 secs on medium heat. Add chili powder and cumin powder and cook for another 30 seconds.
To this add the quinoa, water, beans, corn and diced tomatoes. Season with salt and pepper. Bring to a boil, cover and reduce to low heat. Cook for about 15 minutes or until quinoa is tender.
Once tender, fluff the quinoa mixture with a form. Sprinkle with feta cheese. Serve hot with a slice of lemon on the side.
