Sundal is a traditional snack prepared during festival days like Durga Pooja etc. I tried my hand at combining an Italian Ingredient with South Indian Tadka to make a very tasty snack. You can serve this as a breakfast meal or can pack them in the lunch box for kids.
Ingredients:
Cooked Pasta (Macaroni) – 2cups
Oil – 1 tbsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Asafoetida – one small pinch
Green Chillies – 2 (sliced)
Curry Leaves – from 1 twig
Shredded Coconut – 3 tbsp
Roasted Peanuts – 3 tbsp
Coriander Leaves – 2 tbsp
Lemon Juice – ½ tsp
Method:
Heat the Oil in a pan Crackle the Mustard and Cumin Seeds. Add the sliced Green Chillies, Curry Leaves and Asafoetida. Sauté them for 10 to 15 seconds.
Add the boiled Macroni. Mix well and stir cook for a minute.
Add the Coconut and roasted Peanuts.
Add Coriander Leaves. Mix well. Spray the Lemon Juice and toss well.
Transfer to a serving bowl.
Note:
Add Salt while cooking the Pasta and add little Salt later while making
the Sundal.
