This instant Mango Pickle is a very quick and easy to make pickle with very few spices. This is a handy pickle for serving for parties or big functions. The quantity can be increased or decreased by adjusting the quantity of the ingredients proportionally.
Raw Mango –medium sized – 2 (300 Gms)
Chilli Powder – 2 tsp
Turmeric (Haldi) Powder – ¼ tsp
Asafoetida (Hing) Powder – ¼ tsp
Roasted Fenugreek (Methi) Powder – 4 tsp
Gingelly Oil – 1 ½ tsp
Mustard (Rai) – ½ tsp
Salt to taste
Wash and wipe dry the Mangoes. Chop them into small pieces. (Discard the nuts).
Take the Mango pieces in a mixing bowl. Add all the powders and mix it well. Adjust Salt.
Heat the Oil in a pan. Add Mustard.
When it crackles, add it to the Mango and mix well.
Instant Mango Pickle is ready.
Store it in an air tight container in the refrigerator. It can be stored for 4 to 5 days.
