If you have leftover in the fridge, it can be used to make this healthy Instant Pancake recipe. You can add varieties of vegetables to make it very healthy.
Left Over Rice – 2 cups
Grated Coconut – ¼ cup
Onion – 1 (Finely Chopped)
Green Chillies – 2 (Finely Chopped)
Finely Chopped Coriander Leaves – 3 tbsp
Salt – to suit taste
Gram Flour (Besan) – ½ cup
Whole Wheat Flour – 1/3 cup
Yogurt (Curd) – ¼ cup
Water – as required
Oil – to make pan cakes
Heat the left over Rice in the Microwave. Mash it with a Potato Masher when it is still hot.
Add whole wheat flour, Gram Flour, Carrot, Onion, Green Chillies, Ginger, Coriander Leaves, Salt and Yogurt. Add just enough water and mix well to make medium thick batter.
Heat a non- stick pan. Grease it with some oil. Pour a ladle of batter and spread with a circular motion. Make a 4 to 5 inch diameter circle.
Cook both the sides pouring ½ tsp of Oil around the pan cake till the cake turns brown in color.
Serve hot with chutney of your choice.
