Pasta is the most popular and versatile ingredient in the world and is prepared in various combinations depending on the region. This pasta is one of the classics withy Fresh Tomatoes and Fresh Parsley.
Penne Pasta (or any other Pasta if Penne Pasta is not available- 1 cup
Olive Oil – 2 tbsp
Finely chopped Garlic – 1 tbsp + 1 tbsp
Tomato – 3 (finely chopped)
Fresh Parsley – ¼ cup (cleaned and finely chopped)
Tomato – ½ (deseeded and cut into stripes)
Grated Cheese – 2 tbsp
Olive – 5 (cut into rings)
Sugar – ½ tsp
Chilli Oil – 1 tsp
Cook Pasta as per instructions given in the pocket which you bought. Drain the water. Preserve ¼ cup of this Pasta stock for use later.
Heat the Oil in a pan. Add chopped Tomatoes and Sugar. Cook them for 2 to 3 minutes. Do not mash the Tomatoes.
Add ¼ cup of finely chopped Parsley. Stir cook for a minute.
Add the Pasta stock. Allow it to boil for 2 minutes.
Add the cooked Pasta, grated Cheese and slice Tomatoes. Mix and combine well.
Add a tbsp of finely chopped Parsley, Olives and Chili Oil. Mix well.
Transfer to a serving bowl.
If you do not have Chilli Oil, add some Chilli flakes and Black Pepper Powder.
