From the number of powders we use as accompaniment to Idli, Dosa, Rice etc, Flax Seed Powder is one which is rich in Omega 3 Fatty Acids and has a high fiber content. Flax Seed is good for the heart and is also known to be great for controlling diabetes. It helps in weight control also.
Flax Seed – ½ cup
Skinned Black Gram (Urad Dal) – ½ Cup
Curry Leaves – ½ Cup
Tamarind (Imli) – a Big Marble Size
Garlic Pods – 7
Red Chilli – 12 to 15
Asafetida (Hing) Powder – ½ tsp
Sugar – 3 tsp
Salt – ¾ tsp
Oil – ¼ tsp
Dry roast Flax Seed till it crackles and transfer to a bowl.
Dry roast Urad Dal till it turns light pink and the aroma starts releasing. Transfer to the bowl.
Heat ¼ tsp of oil in a pan and fry Red Chilies. Do not allow it to burn. Transfer to the bowl.
In the same pan, add curry leaves and fry till it becomes crispy. Transfer to the bowl.
Roast Garlic and Tamarind and transfer to the bowl.
Allow all ingredients to cool. Add Sugar, Salt and Asafoetida and grind to a semi fine powder.
Allow the powder to cool and store in an air tight container.
To eat, add enough oil (recommended gingelly oil) with the powder, mix it well and have it with idli or dosa.
