This is an easy dish you can make on a busy morning, afternoon or evening 🙂 Like any Noodles dish, it takes just 10 to 12 minutes to prepare this dish. Kids do love Noodles and this dish would become one of their favorites. You can add veggies and protein to it of your choice and they will still lap it up!
Maggie Noodle Packet – 2
Water – ½ cup
Egg – 2 to 3
Oil – 2 tbsp
Finely Chopped Ginger – 1 tsp
Garlic – 5 pods (finely chopped or crushed)
Onion – 1 (finely chopped)
Medium Sized Tomato – 3 (finely chopped)
Red Chilli Powder – ½ tsp
Roasted Cumin Seed Powder – ½ tsp
Veggie stock cube – 1
Noodle Masala Powder – 1 packet
Salt to taste
Sweet Corn Blanched – 3 tbsp
Green Peas (fresh or frozen) ¼ cup (Parboiled)
Finely Chopped Parboiled Carrot – 3 tbsp
Finely chopped Parboiled French Beans – 3 tbsp
Black Pepper Powder – ¼ tsp
Coriander Leaves – 2 tbsp
Heat the Oil in a pan. Add the Ginger, Garlic and sauté for few seconds in high flame. Add Onions. Sauté for 2 minutes till the Onion turns golden. Add Tomatoes and cook for 2 minutes.
Add Red Chilli powder, Coriander Seed Powder, Noodle Masala Powder and Salt. Cook till the Tomatoes become soft.
Add the parboiled vegetables. Cook for a minute.
Add water. When it comes to rolling boil, break the 2 packets of Noodles and add to the boiling water. Add cumin seed powder and veggie stock cube (optional). Cook for 3 to 4 minutes till the Noodles become soft, but not mushy.
Push the Noodle aside to one side of the pan. Break 3 Eggs in the space created, sprinkle Black Pepper Powder and Salt on the Eggs. Scramble the Eggs. Now, combine them with the Noodles.
Cook till the dish becomes dry. Transfer to a serving bowl.
You can scramble the Eggs separately and add to the Noodles also.
