Egg Fried Rice

Egg Fried Rice

It is an Indo Chinese recipe – you can prepare this dish with left over stiff rice. If so the preparation time of this dish would be 20 minutes only. It is a nutritious dish loaded with a lot of mixed vegetables and eggs and can be served with Manchurian Gravy, Paneer Chilly etc.

Ingredients:

Long grain rice – 1 1/4th cup (300 gm)

Eggs – 4

Ginger finely chopped – 2 tsp

Garlic finely chopped – 2 tbsp

Green chilly finely chopped – 2/3 Nos

Onion finely chopped – 1 no

Carrot finely chopped – 3 tbsp

Capsicum & Cabbage shredded and finely cut in stripes – 3 tbsp

French beans finely chopped – 3 tbsp

Green Spring onion – 3 tbsp

Vinegar – ½ tsp

Soya sauce – 2 tbsp

Pepper powder – ¼ tsp

Olive oil / sesame oil – 2 ½ tbsp

Salt to taste

Method:

Rinse the rice till the water is clear. Drain the water and put it in a vessel. Add 1 ¼ cup of water, ½ spoon of salt and a spoon of oil. Keep the vessel in the pressure cooker, close the lid and cook the rice till one whistle and then lower the flame and let it cook for 5-6 minutes on low flame.

Switch off the flame, open the pressure cooker after 10-15 minutes.

Take out the rice vessel and transfer it to a plate after 5 minutes.

Leave for 10 minutes and then gently separate the rice with a fork.

Note: You can cook the rice directly in the pressure cooker; I have used a separate vessel since it makes the cleaning easy later on. If you are not cooking directly in the pressure cooker then you need to pour in a 1:1 ratio of water in the pressure cooker as well.

Chop the vegetables and set aside. Break the eggs, beat it and set aside.

Heat oil in pan, and then add ginger and garlic. Stir it in high flame for 30 seconds.

Add onion and green chilly. Sauté for a minute.

Add beans, cabbage and carrot and sauté in medium high flame. Keep the vegetables cooked but it must be crunchy. It hardly takes 2 minutes. Add the capsicum and to this then add 2 tbsp Spring onions mix well and then sauté for a minute.

Push all the ingredients in the pan on one side and make space for the beaten egg. Reduce the flame to a medium and pour the egg.

Scramble the egg.

Now mix all the ingredients of the pan and add the rice. Add 1 tbsp of spring onion, soya sauce, vinegar, pepper powder and salt to taste. IMG_1500-300x225 Egg Fried Rice

Mix it well and check for the seasoning and then increase the flame and stir for 1-2 minutes.

Done! Serve it hot.

Note: When you are making this dish you can add a vegetable of your choice like mushroom, baby corn etc.
