Egg Capsicum Bhurji is a very quick and simple recipe. It is commonly served with toasted bread. You can also enjoy this dish with Roti, Chappati etc. Use butter to make this dish which would enhance the taste to a higher level.
Medium Sized Green Pepper/Capsicum – 3 (finely chopped)
Butter – 2 tbsp
Mustard Seeds – ¼ tsp
Cumin Seeds – ½ tsp
Onion – 1 (finely chopped)
Red Chilli Powder – ½ tsp
Coriander Seed Powder – ½ tsp
Ginger Garlic Paste – 1 tsp
Turmeric Powder – 1 pinch
Salt – to suit taste
Black Pepper Powder – ½ tsp
Finely Chopped Coriander Leaves – 2 tbsp
Heat the Oil in pan. Crackle the Mustard Seeds and Cumin Seeds in it.
Add the finely chopped Onion. Sauté them translucent.
Add Chilli Powder, Coriander Seed Powder, Salt and Turmeric Powder. Add Ginger Garlic paste. Mix. Cook for a minute over low to medium flame.
Add the chopped Capsicum. Mix well. Cover with a lid and simmer for 3 to 4 minutes in medium flame. Keep stirring in between.
Break the Eggs into this mixture. Add Pepper Powder. Stir cook for a minute. Cover with a lid and simmer for 4 to 5 minutes in low flame.
Add the Coriander leaves.
Mix and transfer to a serving bowl.
Serve hot with Bread, Roti, Chapatti or Rice etc.
