Egg is used in many dishes and is a versatile ingredient. Egg Bread Masala is one such dish prepared with vegetables, eggs and spices. It can be eaten as a breakfast or lunch or dinner and can be packed and carried in the lunch box to the office or workplace.
Bread Slices – 5 (cut into pieces)
Oil – 2 tbsp
Large Onion – 1 (sliced)
Ginger Garlic Paste – 1 tsp
Egg – 1 or 2
Chopped Capsicum – ½ cup
Large Tomatoes – 2 (crush it well)
Garam Masala – ¼ tsp
Chilli Powder – ½ tsp
Lemon Juice – 1 tsp
Chopped Coriander Leaves – 2 tbsp
Salt to taste
Heat the Oil in a pan. Add Sliced Onion and Salt. Sauté till it becomes translucent.
Add Ginger Garlic Paste. Sauté it for 30 seconds in medium flame.
Add chopped Capsicum. Stir cook for a minute.
Add the crushed Tomatoes, Garam Masala, Chilli Powder and Turmeric Powder. Cook till the Tomatoes get cooked well and it gets to a gravy consistency.
Move the gravy to one side of the pan. Break the Egg into the other side of the pan.
Stir and make a Bhurji (scrambled Egg). Mix it with the Tomato gravy. Add Lemon Juice and mix.
Add the Bread Pieces and mix well so that the Gravy gets mixed with the bread pieces uniformly.
Garnish with Coriander leaves.
Serve with coffee or tea.
