Dim Kosha is a popular street food from the Bengal Region. It is prepared with hard boiled Eggs. Kosha is a cooking style which uses pureed Onion and Spices. This spicy Dim Kosha can be prepared just with potatoes as well.
Hard Boiled Eggs – 3
Boiled Potatoes – 2
Onion – 3 (randomly chopped)
Onion – 2 (sliced)
Panch Poran – 1 tsp
Ginger Garlic Paste – 1 tbsp
Green Chillies – 2 (sliced)
Sugar – ½ tsp
Coriander Seed Powder – 1 tsp
Cumin Seed Powder – ½ tsp
Tomato (medium sized) – 4 (crushed)
Red Chilli Powder – 1 tsp
Turmeric Powder – ¼ tsp
Garam Masala – ¼ tsp
Finely Chopped Coriander Leaves – 2 tbsp
Salt to taste
Oil – 3 ½ tbsp
Heat ½ tsp of Oil in a pan and sauté the randomly chopped Onion in it for 3 to 4 minutes in medium flame. Cool the Onions and grind to a fine paste with little water.
Halve the hard boiled Eggs. Peel and cut the Potatoes into thick wedges.
Heat one tbsp of Oil in a broad pan. Add a pinch of salt and turmeric powder. Mix and spread it all over the pan. Arrange the Potato wedges and the boiled Eggs evenly on the pan.
Roast them on medium flame till they turn golden brown on all sides. Transfer them to a plate and keep aside.
In the same pan, add the remaining Oil. Add the Panch Poran. Allow them to crackle. Add the sliced Onion, pinch of Salt and Sugar. (The Sugar helps in caramelizing the Onions). Sauté till the Onion turns golden brown.
Add the Onion paste and the Ginger Garlic Paste. Sauté till the raw smell of the Ginger Garlic Paste goes away.
Take Chilli Powder, Coriander Seed Powder, Turmeric Powder and Cumin Seed Powder in a small bowl.
Add 2 to 3 tbsp of water. Mix them well.
Add the diluted masala paste. Stir for 3 to 4 minutes.
Add the crushed Tomatoes and Salt. Continue cooking till it becomes dry.
Add the Garam Masala and the slit Green Chilli.
Add a cup of water. Boil it for a couple of minutes.
Add the roasted Potatoes, Eggs and the chopped Coriander Leaves.
Mix gently. Adjust the consistency by adding water, if required. Cover the pan and simmer for 2 to 3 minutes.
Transfer to a serving bowl.
