Coconut rice is one of the tastiest preparations of South India- simple to prepare. There are other variants and the following is the simplest of them.
Cooked Rice – 1 bowl (fluffy)
Coconut Oil- 1 tbsp
Mustard Seed – 1 tsp
Skinned and splitted Black Gram (Urad Dal)-1 tsp
Bengal Gram (Chana Dal) – 1 tsp
Red Chilli – 1 Broken
Green Chilly – 2 Nos (slit)
Cashew – 12 Nos
Peanuts – 1 tbsp.
Grated Coconut – 1 ½ cup
Curry leaves – 1 spring
Salt to taste.
Heat Oil in a pan. Add Mustard and allow to crackle. Add Urad Dal, Chana Dal, Cashew Nuts, Peanuts and Red Chili.
Stir for a minute in low flame. Add Curry leaves and Green Chili.
Add Coconut. Stir cook for 2 minutes in medium flame. Add Rice and Salt and mix well.
Cook for a couple of minutes. Check salt and adjust, if required. Remove and serve.
Serve with any gravy dish, pickle and papad.
