This is a recipe from my mother. It was one of her go-to recipes when she was tired or did not have too much time to make lunch or dinner. I started making this recently and it has become one of the most loved dishes at home.
Ingredients:
Boiled potatoes: 2
Green chilly: 2
Onion: 1
Cashew: 10
Mustard seeds: 1 tsp
Coconut: 2 tbsp
Black gram/urad dal: 1 tsp
Curry leaves: 8-10 leaves
Cilantro leaves (chopped)-3 tbsp
Oil: 2 tsp
Salt to taste
Method:
Finely chop the onion and green chilies.
Peel and crumble the potatoes.
Heat oil in a pan. Add mustard seeds and allow it to splutter. Add black gram dal and stir it for 30 seconds.
Then add cashew (broken into pieces) and stir for couple of minutes on medium flame. Then add onions, green chilies and curry leaves. Add salt to speed up this cooking process.
When onions become translucent, add potatoes, coconut and cilantro leaves. Stir and cook for few minutes.
Done!
It goes well with sambhar or dal rice. It can also eaten inside a chapatti roll.
