There are different raitas like boondi Raita, onion Raita, onion and tomato raita, pineapple raita, apple raita etc. All recipes are easy to make. They are all good for health also. Carrot is a win win as it a high source of Vitamin A and this dish works for kids or people who do not like carrots. Raitas goes very well with parathas, rotis, pulao and biryani.
Carrot – medium size – 1
Curd/Yogurt – 1 cup (fresh and chilled)
Green Chilly (Finely Chopped) – 1
Mustard Seed / Rai-1/2 tsp
Skinned Black Gram (Urad Dal) – ½ tsp
Asafoetida (Hing/Kayam) – 1 pinch
Salt to taste
Cilantro Leaves (Dhania) – finely chopped – 2 tsp
Oil – 1 tsp
Wash and peel the carrot and grate it. Mix the grated carrot, salt and cilantro leaves.
Take fresh chilled curd/yogurt and whip it till smooth and creamy. Add the carrot mixture to it.
Heat oil in a pan. Add mustard seed. When it splutters, add black gram dal. Wait for a few seconds. Add green chili. Sauté for 30 seconds. Add asafoetida.
Add this tempering to the carrot and curd mixture. Mix well.
