Cabbage Chutney/Cabbage Spread

Dry Spinach with Coconut / Dry Palak with Coconut

Cabbage is a vegetable with much nutritious value. It helps in controlling Type 2 diabetes. It has Calcium, Iron, Magnesium, Phosphorous, Zinc, Vitamin A, C, D, E and K.  Varied Recipes are possible using Cabbage and one of them is Cabbage Chutney. This can also be used as a spread.

Ingredients:

Cabbage – 250 Gms

Green Chilli- 3 to 4 Nos

Grated Coconut – 4 tbsp

Asafoetida – 1 pinch

Ginger – ¼ inch (Optional)

Curd – 3 tbsp

Salt to taste

For Tempering:

Oil – 1 tbsp

Mustard (Rai) – ½ tsp

Split Black Gram (Urad Dal) – ½ tsp

Curry Leaves – 1 string

Preparation:

Chop the Cabbage into small pieces, wash it well and strain the water. Add ¼ cup of water to the cabbage in a pan, cover and cook for 5 minutes or so on medium heat till the Cabbage becomes soft and tender.

Grind this along with all the other ingredients to a coarse consistency. Transfer to a serving bowl.

Heat Oil in the same pan, add Mustard seeds. When it crackles, add Split Black Gram (Urad Dal). After a few seconds, add Curry Leaves.

Add this seasoning to the Chutney and mix well.

Done!

Serve with Idli, Dosa, and Uthappa or can be uses as a spread.
