Butter Garlic Spinach Curry/ Lasoon Palak

Butter Garlic Spinach Curry/ Lasoon Palak

This is a recipe which uses minimal ingredients and makes a simple and tasty dish which goes well with Indian Breads or Rice Preparations especially Jeera Rice

Ingredients

Spinach (Palak) – 1 big bunch

Butter – 2 tsp

Garlic (finely chopped) – 1 tbsp

Fresh Red Chilli – 3 Nos (Slitted)

Crushed Peanut – 1 tbsp

Salt to taste

Preparation:

Remove the stems of Spinach and discard. Wash in running water for a couple of minutes and squeeze the water out.

Heat Butter in a pan. Add Garlic and sauté for a couple of minutes in low flame. Add slitted fresh Red Chilies and sauté for a minute.

Add Spinach Leaves and cook for a minute.

Add salt and crushed Peanut and cook for another couple of minutes till the Spinach become dry.

Notes:

Adjust spiciness to suit taste.

Spinach contains salt on its own and so, adjust salt accordingly.

Also, Spinach shrinks a lot and the volume becomes low. Keep in mind while adding salt.
