We call Chinese dishes which are modified to suit the Indian Taste and flavor as Indo Chinese Dishes. They follow mainly the Chinese Recipe with subtle changes in the ingredients and the cooking method. I had already posted quite a few such recipes. We will see here the method for making Burnt Garlic Fried Rice. It has a very distinct nutty flavor. This dish can be made in just 10 minutes if you have cooked rice ready with you or rice leftover from the earlier meal. I preferred this fried Rice to be white in color and so, added just 1 tsp of Soya Sauce. If you want the color to be darker, you can increase the quantity of Soya Sauce. The crunchy vegetables, burnt Garlic and Soya Sauce give a delicious touch to the Stir Fried Rice.
I cooked this Rice for a party which I gave to my neighborhood children. And they loved the rice so much that they are requesting for one more party. 🙂
Ingredients:
Cooked Long Grain Rice – 4 cups
Olive Oil or Sesame Oil – 3 tbsp
Finely chopped Garlic – 3 to 4 tbsp
Carrots – 1 (finely chopped)
French Beans – 12 to 15 (finely chopped)
Capsicum – ½ (finely chopped)
Green Chilli Sauce – 1 tsp
Black Pepper Powder – 1 tbsp
Finely chopped Spring Onion – 3 tbsp
Dark Soya Sauce – ½ tsp
Vinegar – 2 tsp
Salt – to taste
For Garnishing:
Spring Onion, Fried Garlic
Method:
Heat the Oil in a broad pan. Roast Garlic in it till it turns brown and crunchy. (Remove some of the roasted Garlic and keep aside for garnishing at the end).
Add the beans and Carrots and little Salt. Stir fry for 2 to 3 minutes. Let them become crunchy.
Add Soya Sauce, Green Chilli Sauce and the Black Pepper Powder. Mix them well with the stir fried vegetables.
Add the Rice and adjust Salt.
Mix and toss the Rice and the vegetables and burnt Garlic. Stir fry for a minute. Add Vinegar and mix well. Switch off the flame.
Transfer to a serving bowl and garnish with Spring Onion and Fried Garlic.
Notes:
The quantity can be doubled easily by increasing the quantity of all the ingredients.
You can add vegetables of your choice.
You can also adjust the quantity of all the spices like Pepper Powder, Chilli Sauce, Soya Sauce and Vinegar to suit your taste and likes.
Initially I used only 2 tbsp of Garlic, but felt that the quantity was not enough, I doubled the quantity next time and it became a real hit. Increase the quantity of Garlic if you like Garlic flavor.
