All the vegetable peels have lot of nutrition value. Some of the peels (from Bottle Gourd, Plantain etc) can be used in making Chutney, stir fries etc. Here is one such recipe for turning the peels from bottle gourd into a delicious stir fry dish.
Bottle Gourd Peel – 1 cup (chopped)
Oil – 1 tbsp
Cumin (Jeera) Seed – ½ tsp
Sliced Onion – 1
Sliced Green Chilli – 3 or 4
Grated Ginger – 1 tsp
Red Chilli Powder – ¼ tsp
Turmeric (Haldi) Powder -1 pinch
Cilantro – 2 tbsp
Roasted Coarse Peanut Powder – 2 tbsp
Salt to taste
Heat the Oil in a pan. Add the Mustard Seed and Cumin Seed. Allow them to crackle. Add Onion, Green Chilli and the Grated Ginger. Sauté till the Onion become translucent.
Add Bottle Gourd Peel, Salt and Turmeric Powder. Sprinkle 2 tbsp of water. Mix it. Cover the pan with a lid and cook in low to medium flame for 6 to 8 minutes till the peels become soft. Stir in between.
Add the Chilli Powder and the Coriander Leaves. Mix and simmer for a couple of minutes.
Add the peanut powder and mix.
Stir cook for a minute and transfer to a serving bowl.
Serve with Sambar Rice, Rasam Rice etc.
