Vegetables like Lauki (Bottle Gourd) are not liked by many due to its bland taste. But, Lauki Ka Bharta is a very tasty recipe which would make everyone loves it. I tried it at home and it was delightful to see everyone wipe off this dish in minutes 🙂 It goes very well with Roti, Nan etc.
Bottle Gourd (grated or chopped) – 500 Gms
Boiled Green Peas – ¼ cup
Oil or Ghee – 2tbsp
Cumin (Jeera) Seed – ¾ tsp
Kalonji (Onion Seed/Nigella Seed) – ¼ tsp
Bay Leaf – 1
Green Chilli – 2 (chopped)
Grated Onion – 1
Turmeric (Haldi) Powder – one pinch
Ginger Garlic Paste – 1 tsp
Tomatoes Big (Crushed) – 2
Coriander (Dhania) Seed Powder – 1 tsp
Red Chilli Powder – 2 tsp
Cumin Seed Powder – ½ tsp
Garam Masala – ¼ tsp
Kasoori Methi (Dry Fenugreek Leaves) – 1 tsp
Cilantro (Dhania Leaves) – 2 tbsp (for garnishing)
Ghee – ¾ tsp (for Garnishing)
Burning coal – for smoking
Green Cardoman – 1(for smoking)
Cook the chopped or grated Bottle Gourd in a pressure cooker for 1 whistle without water.
Heat the Ghee or Oil in a pan. Add Bay Leaf. Stir it. Add Cumin Seeds and allow them to crackle.
Add Grated Onion.
Stir cook in medium flame for 4 to 5 minutes. Add the Ginger Garlic Paste and little salt. Sauté for a couple of minutes.
Add the crushed Tomato and cook till it becomes dry.
Add boiled Bottle Gourd, Green Peas and Green Chilli. Cover and cook till it attains the required texture.
Add Garam Masala and Kasoori Methi.
Now for smoking:
Place a folded aluminum foil in the center of the gravy. Place a burning coal on it. And place the Cardoman on top of the burning coal. Pour a spoon of Ghee on to the burning coal. There will be lot of smoke emanating. Cover the whole pan with a lid. Leave for a couple of minutes. Open the lid, remove the coal. Pour the Ghee which is in the Aluminum foil to the gravy and mix.
Garnish with cilantro. Done!
The gravy can be made thick or semi thick depending on the choice.
Green Peas is optional and can be avoided if not available.
