Bhurji Pav is a popular Mumbai street food. Bhurji is an Indian style scrambled egg with Indian Masala. Bhurji is served with buttered Pav. If Pav is not readily available, one can use Bread or any Indian flat bread.
Ingredients
Buns – 4 Nos
Eggs – 4 Nos (lightly beaten)
Oil / Butter – 1 tbsp each
Cumin Seed (Jeera) – 1 tsp
Crushed Ginger – 1 tsp
Crushed Garlic – 8 pods
Green Chilli -2 Nos (finely chopped)
Onion -2 Nos (finely chopped)
Capsicum (Bell Pepper) – ½ piece (finely chopped)
Pav Bhaji Masala- 1 tsp
Tomato – 2 Nos (finely chopped)
Red Chilli Powder – ¾ tsp
Turmeric (Haldi) Powder – ¼ tsp
Coriander (Dhania) Powder – ½ tsp
Garam Masala (All spices ground) – ¼ tsp
Salt to taste
Cilantro (Dhania Leaves) – 2 tbsp
Butter – 1 tsp
Method
Heat 1 tbsp of oil in a pan. Add Jeera. When it crackles, add Onion, Green Chilli, Ginger and Garlic. Cook till the Onion becomes translucent.
Add Capsicum. Cook for 2 to 3 minutes.
Add Tomato. Cook for another 2 to 3 minutes.
When it is half cooked, add Haldi Powder, Chilli Powder, Dhania Powder, Pav Bhaji Masala, Garam Masala, Salt and Cilantro. Continue cooking till the Tomatoes become soft and the raw smell goes away.
Add 1 tbsp of Butter, mix well.
Beat the Eggs and add to the above.
Stir cook for 2 to 3 minutes till the Egg is cooked well.
Transfer to a serving bowl.
