Anda Ghotala is a variation of scrambled egg. It is said that the origin of this dish is from Surat in the Gujarat region of India. It is a spicy egg dish flavored with Pav Bhaji Masala. Ghotala means confusion and this dish definitely will confuse everyone. One cannot find out whether the eggs in this dish are boiled eggs or scrambled eggs or Half Fried Eggs (Bull’s Eye) and so, the name ANDA Ghotala might have been ascribed to this dish. The fact is that we use the Eggs in different forms – boiled, scrambled and Half Fried. This dish is a popular street food in the Surat city and it is a popular dish among students and youngsters. The fame it got in Surat has now spread and is now available as street food in almost all major cities now. It is generally served with Pav, but can also be served with Roti, Chappati etc.
Raw Eggs – 3
Hard Boiled Eggs – 2
Onion – 2 (finely chopped)
Green Chilli -2 (chopped)
Tomatoes – 2 (finely chopped)
Ginger Garlic Paste – 1 tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – ¼ tsp
Garam Masala – ¼ tsp
Pav Bhaji Masala – 1 tsp
Butter – 2 tsp
Chopped Coriander Leaves – 2 tbsp
Pepper Powder – ¼ tsp
Oil – tsp and 2 tbsp
Heat a tsp of Oil in a pan. Add 3 tbsp of chopped Onion, sauté it till it becomes translucent.
Break one Egg into it, add Salt and Pepper. Scramble them.
Mash them with a Potato Masher. Transfer to a bowl and keep aside.
Heat 2 tbsp of Oil and 1 tsp of butter in the pan. Add Onion and Green Chilli, Sauté for a minute.
Add Ginger Garlic Paste and cook till the raw smell goes away.
Add the Tomatoes, chilli powder, Coriander Seed Powder, Turmeric Powder, Cumin Seed Powder and the Pav Bhaji Masala. Mix well.
Add 2 to 3 tbsp of water. Mix well. Cover with a lid. Simmer for 3 to 4 minutes in low flame.
Mash this also with a ladle.
Add 2 to 3 tbsp of water and mix. Cut the hard boiled Eggs into small pieces and add them to this.
Mash them well with a ladle as much as possible.
Add 1 tsp of Butter and chopped Coriander Leaves. Mix them.
Break the remaining two Eggs gently into the center of gravy. Sprinkle Pepper Powder and chopped Coriander leaves.
Cover and steam for a minute.
Garnish with finely chopped Coriander Leaves and serve.
