Raw Sweet Mango Candy / Green Mango Dry Sweet Candy
What we are going to see is a recipe for a tasty, mouthwatering and tempting snack which can be stored for months together and enjoyed whenever you want. It is a very easy to make candy with raw Mangoes like Totapuri Mangoes, also called as Ottu Mangai, Kili Mooku Mangai etc. If this Mango variety is not available in your region, you can select any raw Mango which is less tangy. Let us see how to make this Candy.
Totapuri Mangoes – 2 (or any raw mango less tangy)
Sugar – ½ cup (adjust depending on tanginess of the Mango)
Salt – a pinch
Powdered Sugar – 3 tsp
Wash and clean the Mangoes. Dry them with a towel. Peel off the skin. Cut the peeled Mangoes into ½ inch thick strips (not too thin or too thick).
Boil 750 ml of water in a pan. Add the Mango stripes and cook for 3 to 4 minutes in low medium flame or till the Mango are cooked 75 percent. Strain out the water and transfer the Mangoes to a bowl. Add 1/2 cup of Sugar and a pinch of salt. Mix gently or shake gently. Adjust the quantity of Sugar depending on the tanginess of the Mango. Cover with a cloth or plate and leave it for three days. Mix them gently twice a day during these three days. And keep it covered after mixing.
You will find Sugar syrup would have formed. Strain out the syrup completely.
Arrange the Mango pieces in a plate. Arrange them in such a way that the pieces do not touch each other. Keep the plate with the Mango pieces in direct sun light for 3 days. Else keep them under the fan for 4 to 5 days. Let them dry and become without any moisture.
Sprinkle 2 to 3 tbsp. of Sugar Powder over the Mango pieces. Let eh Mango pieces get coated with the Sugar Powder on all sides evenly. Transfer the pieces into air tight container. Enjoy the Sweet Mango Candy. You can store them for months together in a refrigerator.
Use the drained water after boiling the Mango for making Aam Panna – a Mango drink.Store the drained syrup in an air tight bottle in the refrigerator. Whenever you want to make a refreshing Sherbet, take 2 tbsp. of the syrup in a glass, add water and mix. Add Ice Cubes and enjoy the Mango Sherbet. This syrup can be stored in the refrigerator for 3 to 4 months.
