Nungu Payasam / Ice Apple Kheer – a dessert
Nungu Payasam is a delicious creamy dessert made with palm fruit (Nungu) generally called as Ice Apple. Nungu or Ice Apple is generally available in plenty during the summer season. It is a very healthy summer fruit. It prevents dehydration. It is rich in calcium and phytonutrients. It is a very useful in relieving skin rashes and itchiness. It is a low calorie fruit. It helps in relieving constipation. We can make quite a few desserts and sherbats with this fruit. We will see how to make a tasty delicious Payasam (Kheer) with this fruit.
Ingredients :
Milk – 750 ml
Nungu (Ice Apple / Palm Fruit) – 10 (Select tender ones)
Cashew – 10
Milk Powder- 3 tbsp
Saffron – 2 pinch
Cardamom Powder- ¼ tsp
Sliced Almonds and Pistachios – 1 tbsp each (optional)
Sugar – 4 tbsp (adjust to suit your preference)
Method:
Peel off the brown skins from the Sugar Apple (Nungu also called as Tadgola) and discard. Cut half the quantity of the white bulb into small pieces. Crush the balance half quantity. Mix them together and keep aside.
Blend the Cashew Nuts with milk powder. Boil the Milk in a pan. Add the blended Cashew. Add Saffron, sliced Almonds and Pistachios. Add Sugar. Stir well and cook for 4 to 5 minutes. Keep stirring very often to avoid them sticking to the bottom of the pan. Now, switch off the flame and allow it to cool. Once it has cooled completely, add the blended Nungu (Ice Apple). Mix well. Transfer them to a serving bowl or glasses and refrigerate them for 2 to 3 hours. Garnish with sliced pistachios or sliced Almonds and serve.
